Ever since knowing how to prevent bitter gourd from being too bitter, I started to enjoy eating bitter gourd. This fried bitter gourd omelette is a very easy dish to prepare and I was happy that my hubby likes it. Even my niece enjoys this vegetable which most young people may not fancy at all.
I should have cooked the whole portion which uses 4 eggs, then we didn't have to fight for it.

Ingredients
[serves 3]
½ bittergourd [about 200 gm] – seeded and white pith scrapped clean – thinly sliced
Salt to taste
1 tbsp chopped garlic
2 tbsp oil
Combine Together
2 eggs
½ tsp salt
½ tbsp light soy sauce
Dash of pepper and chicken stock granules
- Heat oil in a non-stick wok, add in chopped garlic and bitter gourd to fry with salt until soft.
- Spread out the fried bitter gourd into a thin layer, then pour in the egg mixture in a circular pattern to cover the vegetable.
- Leave to fry until the set.
- Flip it over and continue to fry until golden brown.
- Dish up to serve.
